A couple of weeks ago my lovely red mixmaster went on the blink. More precisely, it blows the fuse. So I have to take it in to get fixed again. Which is a bugger because it doesn’t seem that long ago I had to get it fixed after the spoon-in-the-beaters incident of 2010. For me, not having a working mixmaster is like having my arm cut off. Dramatic, but true.
Anyway, so I borrowed my mum’s mixmaster (lovely memories from my childhood) although the memories didn’t match up to the fact that it’s actually even noisier than mine and because it’s not a twin motor, the bowl doesn’t move against the beaters, so it was incredibly slow and laborious for the noise incurred.
And as it’s still been holidays for some of my kids, cakes have been required. This is a delicious melt + mix butter cake that I have to share with you. It was originally a Lemon Cake from a Kootooyoo recipe that I would make when babies were sleeping… but this week I didn’t have any lemons, and mandarins are in plentiful supply.
You don’t have to be so heavy handed with the icing… feel free to ‘drizzle’ it over rather than pile it on if you wish. My environment isn’t exactly Masterchef approved, so you end up getting what you get and this time it was pretty generous icing… probably due to the naked banana photobombing going on, it was hard to concentrate…

I love your Bundt tin. I love to say bundt since I saw one on another blog last week. My Mum has since let me borrow hers. (They so want us to be like them, do you think?) Then, the universe aligned and it turned out IGA is selling a bundt collection this week for $5.99. How prophetic that you should post a mandarine bundt and for once I have the ingredients. Hooray!
